It's time to give salmon another try with this fantastic recipe that brings the taste of the Far East to your table!
Salmon is one of my all-time favourite go-to proteins for any day of the week. It can be enjoyed with many different sides like quinoa, a spring salad, rice or vegetables. Rich in omega-3s and protein, salmon fillets are a healthy option for quick and flavourful, weeknight meals. I have shared a few salmon recipes in the past. Here is another one of my favourites: Teriyaki Salmon!

Ingredients
1/4 cup soy sauce
1/4 cup water
1 teaspoon grated ginger
1 tablespoon brown sugar
1 teaspoon red chili flakes (or to taste)
1 small garlic clove, minced
1 tablespoon of mirin (Asian rice wine)
1/4 teaspoon sesame oil or extra virgin olive oil
1/2 tablspoon cornstarch
1/2 tablespoon water
2 salmon fillets
2 green onions, diagonally sliced for garnish (optional)
Method
1) In a saucepan, add the soy sauce, ¼ cup water, mirin, brown sugar, chili flakes, oil, ginger and garlic. Simmer until the brown sugar dissolves.
2) In a small bowl, mix together the 1/2 tablespoon of water and cornstarch and add it to the simmering sauce. Allow it to thicken, turn the heat off and let it come to room temperature.
3) Place the salmon fillets in a shallow dish and pour the sauce over them, coating the salmon well with the sauce.
4) Cover and allow the salmon to marinate for a minimum of half hour in the fridge.
5) When you are ready to cook, preheat a non stick skillet over medium high heat, take the salmon out of the marinade and make sure to shake off excess marinade (reserve the marinade) and place the salmon in the hot skillet.
6) Allow the salmon to cook for about 1 minute on medium high, then turn the heat down to medium low, cover the skillet with a lid and allow the salmon to cook for a few minutes on each side or until the salmon is almost fully cooked.
7) Pour the reserved marinade on the salmon fillets and let it cook for the last couple minutes.
8) Serve with a side of your choice and enjoy!
