Tandoori Spiced White Fish Halibut Recipe!

In my opinion, there is nothing more satisfying than Indian food on any night of the week. We all know that some Indian dishes take a long time to prepare and some are so rich that they will sneak a spare tire around your waist in no time; this dish, however, is quick to whip up and will please even the most calorie conscious person in your household.


Tandoori Spiced Halibut

Ingredients

For the Tandoori Spice Mix

1 tablespoon red chili powder, or to taste
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon garam masala
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 1/2-inch piece ginger, grated
3 cloves garlic, finely chopped
Juice of 1 lemon
1 tablespoon tomato paste
1 1/2 tablespoons vegetable oil
2 tablespoons yogurt
1/2 teaspoon sugar
2 tablespoons vegetable oil, for cooking the fish

Method

1. Toast the cumin and coriander seeds with a little salt. 
2. In a mortar and pestle, grate ginger and add the chopped garlic and then add the toasted cumin and coriander seeds. Add the powdered masalas and half of the lemon juice. 
3. Add tomato paste and oil and mash it all up nicely until you have a beautiful deep red tandoori paste.
4. Add the yogurt into a bowl and add the tandoori paste and the remaining half of the lemon juice and sugar and mix well to combine it all.
5. Take your halibut pieces and marinate them in the paste for 5 minutes.
6. Heat the pan with 2 tablespoons of oil and place the fish gently and cook for 3 ½ minutes per side.
7. In the meanwhile, you can make a quick cucumber mint yogurt to go along side of your fish. 

For the Cucumber Mint Yogurt

Add finely chopped mint and thin shavings of cucumber into yogurt. Add salt and pepper to taste and add the juice of half a lemon.

Quick, delicious and perfect for a weeknight dinner. Enjoy!
