We know most of you pretty much have your entire menu set for tomorrow, and bravo! That means you get to avoid the supermarkets today but what about those last minute binds? A guest who was assigned to bring a dish suddenly cancelled or your planned host can’t do it after all and now everyone’s gathering at your place.
End your dilemma with the following slow cooker easy recipes that would leave you with lots of time to spend with your family this Thanksgiving.
SLOW COOKER SAVORY SWEET POTATO BAKE
Great as dinner or desset.
Prep time: 15 mins Cook time: 5 hours Serves: 8-10
Ingredients (serves 8-10)
1 tablespoon salted Butter
5 pounds Sweet Potatoes, peeled and sliced in 2-inch rounds, ¼-inch thick
2 teaspoons chipotle Chili powder, divided
1 teaspoon kosher Salt, divided
14 to 16 ounces shredded Gruyere cheese, divided
2 cups heavy cream
Preparation
Grease the inside of a 6-quart slow cooker.
Place 1/3 of the sweet potato rounds inside, sprinkle 2/3 teaspoon chili powder, and 1/3 teaspoon of kosher salt. Add 1/3 shredded cheese.
Repeat layers until you finish all the measured ingredients.
Pour heavy cream evenly over the top.
Cover and cook on low heat for 5 hours or on high heat for about 2 hours.
SLOW COOKER CRANBERRY CHUTNEY
Replace canned cranberry sauce with this fresh twist on the traditional recipe.
Prep time: 10 mins Cook time: 5 hours Serves: 20
Ingredients (serves 20)
2 pounds fresh Cranberries
½ cup Sugar
1 cup brown Sugar
1 cup Raisins
4 teaspoons powdered Cinnamon
2 teaspoons powdered Ginger
1 teaspoon powdered Cloves
½ teaspoon Allspice
1 cup Apple juice
2 cup chopped Onion
2 cup chopped Apples
1 cup chopped Celery
Preparation
Rinse cranberries and discard the overripe ones.
Combine all ingredients in a slow cooker. Cook on low heat for 5 hours, stirring once in a while.
For a thicker chutney, let cool and refrigerate before serving.
SLOW COOKER TURKEY BREAST
Need a change from the usual turkey trot? Impress your guests with this super-savvy recipe.
Prep time: 20 mins Cook time: 6 hours Serves: 14
Ingredients
1 bone-in Turkey breast (6 to 7 pounds), skin removed
1 tablespoon Olive Oil
1 teaspoon dried minced Garlic
1 teaspoon seasoned Salt
1 teaspoon Paprika
1 teaspoon Italian seasoning
1 teaspoon Pepper
1/2 cup Water
Meat thermometer
Preparation
Brush turkey with oil. Combine the garlic, seasoned salt, paprika, Italian seasoning and pepper; rub over turkey. Transfer to a 6-qt. slow cooker; add water.
